Akesi Farms Chicken in Tomato Sauce
This is the signature dish that we made during our episode of The Redneck Gourmet. It was inspired by Kwesi's sister with Ghanaian themes but (mostly) local ingredients!
Ingredients
Chicken
- 1 chicken cut into pieces
- 2 tbsp apple cider vinegar
- 1 onion finely chopped
- 1 tsp black pepper
- 2 tbsp fresh ginger chopped
- 4 cloves garlic chopped
- 1 tsp thyme leaves fresh or dried
- 1 tsp crushed chili
- 1 tsp chili powder
- 1 tsp curry powder
- 1 tsp salt to taste
- 2 cups water or chicken stock
- 6-8 tbsp oil for frying high heat oil
Potatoes
- 8-10 potatoes peeled
- 1 tsp salt
Sauce
- 5 tomatoes chopped
- 1 onion sliced into rings
- 2 tsp crushed chili
Instructions
Boil Chicken

In a large pot, mix all the spices (vinegar, onion, ginger, garlic, thyme, chili, curry, salt and pepper) and water (or stock). Add the cut up chicken.

Bring to a boil for about 35-40 minutes for a whole chicken. Use moderate/high heat. About every 10 minutes, mix the chicken and liquid to ensure the flavours come together.

Remove the chicken and set aside. Save the liquid in the pot.
Brown Chicken and Cook Potatoes

In a large frying pan, heat the vegetable oil on medium heat. Fry each chicken piece until golden brown. Set aside when done. Leave oil in pan.

Peel potatoes. Cut large potatoes in half. In a large pot, boil potatoes in salted water until soft. Drain and set aside.
Sauce

To prepare the sauce, start with the existing frying pan and oil. Add the onions and cook until soft over medium heat. Add liquid from the pot where you boiled the chicken. Add tomatoes and chili powder. Let simmer over medium heat for 20-30 minutes.

Once the sauce is cooked, add the chicken back into the pan to heat it up.

Serve chicken and tomato sauce with the potatoes.

Can reduce/increase any spices to taste.
