I was going to use a recipe post but realized I don’t have any measurements!
We have made “potato” wedges a few times now. Our daughter has a love for fries (which we typically don’t allow!) so these are the next best thing.
We eat potatoes every day now!
Simple:
- Peel and slice potatoes into wedges. Try and make them the same size (I never succeed at this!)
- Preheat oven to 400F
- Pour some olive oil into a bowl. Add different spices (we use a mix of herbs and chilies). For a basic suggestion, use “Italian herbs”
- Coat potato wedges in the oil/herb mixture
- Arrange on cookie sheet
- Bake for about 10 mins. Check and turn over the wedges. Bake for another 10 mins. Bake until soft on the inside and crispy on the outside
