Frittata

Sometimes we end up with quite a few broken eggs (that we can’t sell).

We do make lots of different things (made Angel Food cake/Sunshine cake for Easter!) but often, it’s frittata.  Frittata is awesome because you can use up any random veggies in the fridge and a dozen eggs!

We make ours in a cast iron pan. That way you can brown some potatoes for the bottom and then put it in the oven to bake.
