We make fritters quite often.  We don’t have a specific recipe although you can find ones with measurements like this one: (https://damndelicious.net/2014/04/02/zucchini-fritters/).

We use potatoes/zucchini either together or on their own.  Often, we’ll shred a lot of zucchini and put it in the freezer in individual containers so that we can quickly make fritters!

Here’s our general process:

 

  • Shred potatoes (we use our food processor)
  • Add shredded cheese
  • Add shredded zucchini
  • Add beaten eggs
  • Add spices
  • Add flour
  • Mix together
  • Scoop into frying pan – make sure they are thin enough to cook through
  • Enjoy!  We serve with yogurt or sour cream
